The pleasures of eating and drinking function on so many different levels that there's far more to perfect wine-food pairings than scientific flavour matching. However, if you manage to harmonise the essential characteristics of the wine and the food, this will bring out the best flavours of both.
We've put together some suggestions for wines that should go well with particular foods; although, this is by no means a definitive list. However, as long as you follow the basic guidelines, and take into account the weight, acidity and sweetness of the food and the wine, you won't go far wrong. Above all, experiment - surely tasting food and wine must be the most pleasurable research you can undertake!
