Over 99% of wine made in this area is white. These aromatic, apricotty wines generally come from the Albarino grape, either as a varietal wine, or blended with another of the native Galician grape varieties. For example: - Val do Salnés: 70% Albariño,
- Condado del Tea: 70% Albariño or Treixadura,
- O Rosal: 70% Albariño or Loureira,
- Ribera do Ulla: 70% Albariño, blended with other grapes.

The different sub-zones within Rías Baixas all lend different qualities to the basic Albariño grape. For example, varietals made in the Val do Salnés have a fresh, crisp taste with overtones of melony fruit. The wines from O Rosal tend to have a slightly softer, peachier fruit, and those from the Condado have less fruit and more weight.
