Measure

A measure, also known as a jigger, is an indispensable tool for making cocktails. It is used to measure the ingredients precisely to create a properly balanced cocktail.

Traditional jiggers are double sided, with one side containing one measure, and the other containing about one and half times this amount. However, the standard measurements of a jigger can vary widely, depending on the country and the age of the jigger. In the UK, a single measure is defined as 25 millilitres (ml) or 2.5 centilitres (cl). The following UK conversion table shows the amounts that should be used for a range of measures.

Measure Volume (ml) Volume (fl oz)
1 25 9
2 50 18
3 75 27
4 100 36

However, in North America, a standard measure is 1 US fl oz (29.6 ml), whilst older British measures may be marked in gills (where 1/6 gill (1 measure) is equivalent to 23.6 ml) or in Imperial fluid ounces (where 1 fl oz (1 measure) is equal to 28.4 ml).

It is important to use measures consistently, and not to mix different styles of measurement within one recipe.

Choose a jigger that has a well formed lip that can pour cleanly into the shaker or glass. Some may incorporate a handle, which will keep your fingers from becoming sticky if you spill down the outside of the measure.
