A Rickey is an unsweetened cocktail of spirit, lime juice and soda water, first created in 1893 in Shoemakers Restaurant, Washington, for a Congressional lobbyist named Joe Rickey. The original Rickey was made using gin, and this has remained the most popular spirit even today. However, other spirits such as bourbon, Brandy, rum or vodka may also be used. It is important to note that a Rickey is unsweetened - any hint of sugar and it becomes a Gimlet.
