Pepper is used as a term to describe a group of spices that add pungency and heat to food. Black, white and green pepper comes from the black pepper vine (Piper nigrum), whereas chilli powder, paprika and cayenne pepper are made from dried, ground sweet peppers from the Capsicum genus. Each type may be added to food either before, during and after it has been prepared, adding a spicy, fruity or earthy flavour.
