Tortilla

A Mexican tortilla is a thin, unleavened flatbread made using masa harina (ground hominy) or wheat flour. The dough is pressed out into thin patties and then cooked on a hot griddle known as a comal, producing a flexible bread that may be used to wrap meat, fish, cheese or vegetables to make enchiladas, fajitas, chimichangas and quesadillas.

Corn tortillas may also be cut into wedge shapes and deep fried, to produce tortilla chips; a tasty snack food ideal for dipping into guacamole, salsas and other dips. They may also be made into a dish known as nachos, which comprises of tortilla chips coated in melted cheese, with a variety of optional toppings such as salsa, meat, refried beans, sour cream, onions and pickled jalapeņos.

The Mexican tortilla should not be confused with Spanish tortilla, which is a thick omelette made with chopped onion and stir-fried potatoes.
