Like French bread, Italian bread has a dark, hard crust and a soft, slightly chewy interior. They are usually made using strong white wheat flour, plain flour or a combination of both. Some, such as focaccia, are leavened with yeast, whilst others (for example, ciabatta) use a starter dough as a leavening agent. The resulting dough is commonly formed into short, wide loaves or alternatively, it may be shaped into ovals and rounds.
