Cooking Spinach

As spinach greatly reduces in volume when cooked, you should allow 450 g (1 lb) of fresh spinach for two people. Remove any large or coarse stalks and then rinse thoroughly in a colander, making sure any excess water is removed from the leaves.

Place the leaves in a large pan and cook uncovered for 4-5 minutes over a low heat. There is no need to add any extra water. As the lower layer of spinach softens, stir the leaves so that they all wilt down.

When the spinach leaves are tender, place into a sieve or colander to drain, and then press any remaining liquid out with the back of a spoon.
