Cooking Celeriac

Peeled, chopped or sliced celeriac should be plunged immediately into acidulated water (water containing a few drops of lemon juice or vinegar) to prevent it from browning.

It may then be boiled in water with a little lemon juice for 15-20 minutes or until tender, or alternatively, it may be steamed, baked or fried.
