Adzuki Beans

The Oriental adzuki bean (also known as the aduki or azuki bean) is a small, oval shaped bean that is red-brown to maroon in colour with a white-striped ridge. It is one of the most easily digestible of all the dried beans.

The beans may be cooked in exactly the same way as other dried beans to add to savoury recipes such as rice dishes or salads. However, they have a sweeter flavour than other varieties, and may also be ground into flour to make cakes and pastries, or boiled with sugar to make a sweet red bean paste that can be used to make desserts and ice cream.
