Also known as lima, calico or Madagascar beans, these kidney shaped beans have a mild, buttery flavour and a soft, creamy texture when cooked. They are sold in both small and large sizes; the baby beans may be used as a substitute for haricot, cannelli or borlotti beans in salads, stews and pasta dishes, whilst the mature beans are best used in soups and purées as they lose their shape when cooked.

Dried butter beans should be soaked for at least 5 hours and boiled briskly for 10 minutes before cooking.
