Bulb Vegetables

A bulb is an underground globe-shaped stem surrounded by fleshy leaves that contain stored food for the shoot within. One particular family of bulbs is Allium, which produces all of the different bulbs that are eaten as vegetables. Members of the family include varieties such as onions, shallots, leeks and garlic, all of which are typically used to impart flavour other foods.
