Globe Artichoke
After preparing, boil in acidulated water in a stainless pan, perhaps with a piece of lemon tied to the base. If a leaf comes away easily when tugged, and is tender, the artichoke is done and ready to be drained upside down on a rack.
Jerusalem Artichoke
Peel and place in water with a little lemon juice added to avoid discolouration. Boil in acidulated water of about 25 minutes, or roast in the same way as potatoes.
