Wash, cut in half lengthways, then remove the stalk, seeds and membrane. Slice or chop as required before gently frying. Alternatively, fill the halves with cherry tomatoes, mushrooms and basil leaves, drizzle with oil and bake in the oven for 20 minutes. They may also be filled through the top; simply remove the stalk and lift away the core. Other stuffings include cooked rice mixed with minced meat.
