- Using a sharp knife, cut off the crown and the base.
- Setting the pineapple upright on its base, remove the skin in lengthways strips, taking care not to take off too much flesh.
- Remove any brown eyes by cutting out with a knife.
- To create chunks, cut the pineapple lengthways into quarters, remove the core from each section and cut crosswise to slice into pieces.
- To create rings, cut out the centre core, then cut the flesh into slices.
- If you are not serving the pineapple slices or chunks straight away, sprinkle them with a little lemon juice to prevent them from browning.
