Preparing Pineapples

  1. Using a sharp knife, cut off the crown and the base.
  2. Setting the pineapple upright on its base, remove the skin in lengthways strips, taking care not to take off too much flesh.
  3. Remove any brown eyes by cutting out with a knife.
  4. To create chunks, cut the pineapple lengthways into quarters, remove the core from each section and cut crosswise to slice into pieces.
  5. To create rings, cut out the centre core, then cut the flesh into slices.
  6. If you are not serving the pineapple slices or chunks straight away, sprinkle them with a little lemon juice to prevent them from browning.
