Peaches are excellent in salads, flans and pies. Peach purée also makes a delicate and subtle base for sorbets and ice-creams.
One of the most famous peach dishes is Peach Melba, invented by Escoffier for Dame Nellie Melba, the opera singer. This involves a ripe fresh peach gently poached in syrup, served with vanilla ice-cream and fresh raspberry purée.
