Cotechino
Originating from northern Italy, this sausage is made of pork moistened with white wine and subtly seasoned with clove and nutmeg, giving it a creamy, mild flavour. It is often boiled and served with mashed potatoes and beans or added to soups and stews. It is one of the essential ingredients of bollito misto – an Italian dish of mixed boiled meats.

Salsicces
Known as Italian sausages in North America, salsicces have a rustic flavour, which may be hot and spicy if seasoned with chilli peppers, or mild when minced pork and pancetta are used. Salsicces seasoned with fennel seeds and garlic are a popular variation.
