In France, salami is known as saucisson sec (dried sausage).
Saucisson de Lyon
Possibly the most famous of the French salami-type sausages, the saucisson de Lyon is made from pure pork or pork and beef flavoured with spices and garlic. It has a medium-fine texture, with small square pieces of fat.

Saucisse Sèche
This salami is made with pure pork in either a U-shape or as a small straight sausage. It is often labelled with the area where it is produced, such as Provence, Pyrenees or Auvergne.

Rosette
A cylindrical sausage, made with coarsely minced pork and tied in a string net. The casing is made from the lower end of the pig's intestine, which makes the rosette more moist than other salamis.
