Although there are thousands of edible mushrooms in the world, it is thought that the average UK resident will sample fungi from only two different species during their lifetime. It is therefore important to remember that in addition to the common mushroom (or champignon), there are whole range of other varieties sold fresh or dried at local markets and supermarkets. These can make a tasty addition to any recipe, from omelettes and creamy sauces to risottos and pasta.
Although it is becoming increasingly common to find a more varied range of mushrooms in the shops, it is also possible to find and pick your own. However, great care must be taken by those considering taking up mushroom hunting for the first time, as there are many poisonous species of mushroom that look very similar to the edible ones. It is always a good idea to take someone with you when you go mushroom hunting who knows their subject, and never, ever eat any that you have not positively identified as edible.
