Made from soya beans that have been soaked, ground and cooked before being processed into a milky liquid, soya milk is suitable for anyone wishing to avoid dairy products. It has a subtle nutty, bean-like taste and may be flavoured with honey, vanilla or carob to counteract this slight bitter tang. Cholesterol free and low in sodium and fat, soya milk is rich in iron and high in protein.
Uses
Soya milk may be used in much the same way as cow's milk - in cooking or in tea, coffee or as a drink. However, unlike cow's milk, it has a tendency to curdle with acidic foods.
Storage
Most soya milk will keep in a cool dark place for up to one year. However, once opened it should be stored in the fridge and used within three days.
