Known as algue rouge (France), alga roja (Spain).
Also known as sea parsley, dulse is a purplish-red seaweed native to the North Atlantic, Northwest Pacific and Eastern European seas. Its fan-shaped fronds range in length from 2.5 cm to 25 cm (1-10 in) and may be found growing plentifully on rocks.

It has a salty, fish-like flavour, and dried, it can be chewed as an unconventional snack or used as a condiment. Dulse may also be eaten raw as a salad; however, its tough, rubbery leaves are usually better shallow-fried or baked and served as an appetiser or added into ragouts.
