Sea Trout

Known as truite saumonée or truite de mer (France), trota salmonata (Italy), trucha marina (Spain).

The sea trout (or salmon trout) is similar to the brown trout found in rivers and lakes, but, like a salmon, lives in the sea, returning only to fresh water to spawn. It combines the best qualities of both the salmon and the trout - it is more dense and succulent than salmon, but has salmon's pale pink-coloured flesh and superb flavour. An average sea trout is approximately 2.5 kg (5 lb) in weight; however, they can grow to more than 4.5 kg (10 lb).

Like salmon, sea trout can be poached in court bouillon, and also tastes excellent when baked in foil. Serve with hollandaise sauce, beurre blanc or melted butter and season with chervil, parsley or chives.
