Trout

Known as truite (France), trota (Italy), trucha (Spain).

There are a number of delicious trout species, including the following:

  • Brown Trout
    A wild native trout of British rivers and streams, brown trout are brown with red and dark grey spots. Unfortunately, they are not often available in the shops, and as such, often remain a delicious treat for the families of fly fishermen.

  • Rainbow Trout
    A white fleshed, delicate fish with a sweet and succulent flavour. Most rainbow trout are a perfect size for one person; however, it is often possible to buy farmed trout weighing up to 1.5–2 kg (3–4 lb).

Trout can be poached in a court-bouillon, cooked à la meunière (with butter, lemon and parsley), baked, grilled or fried.
