Chicken

In the days before intensive farming, chickens were allowed to grow and develop a rich and full flavour; unfortunately nowadays, birds are normally reared so fast and killed so young that they are rather tasteless in comparison. The one positive aspect of this trend is that chicken has become an excellent vehicle for any number of different flavours.
