Pork belly is taken from the abdominal wall of the pig, and is also sometimes known as streaky, draft or flank pork. It is an inexpensive, rather fatty meat; however, the thickest part of the belly can provide a good proportion of lean meat.
Belly of pork is excellent salted and boiled, and as such is a good way of enriching dishes of beans, lentils and cabbage. Fresh belly can be roasted or braised whole or it may be sliced and grilled or fried.
