Pork chops are slices taken from the loin, chump end or the spare rib joints. All of them are suitable for grilling, frying or baking.
Loin Chops
Taken from the end of the fore loin or from the hind loin, loin chops come complete with a T-bone. Although most will come with the rind and excess fat trimmed away, some may not; in these cases, the rind must be snipped through with scissors to prevent the chop from curling during cooking. Hind loin chops may come with the kidney left in.
Chump Chops
Taken from the chump end, these chops have a round central bone.
Spare Rib Chops
Taken from the spare rib joint, these chops have a smaller eye of meat than loin and chump chops. However, they contain little bone and usually have a sweeter taste.
