Shoulder Blade

This small, rather rich cut from the shoulder can be roasted (either on the bone or boned, stuffed and rolled), or sliced into steaks for grilling, frying or barbecuing. Alternatively, the meat may be minced and chopped for meatballs, pork pies or for Pennsylvania Dutch scrapple - a mixture of pork and cornmeal, fried in either butter or bacon dripping.
