Chinese spareribs (not to be confused with the spare rib joint) are taken from the lower ends of the rib bones. The ribs are cut into single bone strips and the rind and excess fat removed.
Although the ribs have very little meat on them, they are excellent when braised, roasted or barbecued and served with a tasty barbecue or chilli sauce. As the ribs are so bony, you should allow 750 g (1.5 lb) per person.
