Sucking-Pig

A sucking (or suckling) pig is a young pig between the ages of 3–8 weeks that has only fed on its mother's milk. Although it contains relatively little meat, it produces perhaps the sweetest and richest of all pork.

Although sucking pigs range in size from 2.5-9 kg (6-20 lb), it is usually best to choose one from the middle of this range, as it will have developed enough meat without sacrificing any of the tender succulence of the smaller pigs. A mid-sized pig (5.5 kg or 12 lb) should feed approximately 10 people.

Sucking pigs may be spit-roasted or slow-roasted in an oven to produce a crispy skin (crackling) and a tender, somewhat gelatinous flesh.
