The tongue from a variety of animals may be purchased; ox tongue is considered the best; calf's tongue has less flavour, whilst lamb's tongue can be rather dull. Pig's tongue is usually sold with the head.

Although tongue may be bought fresh, it is more common to find it salted or smoked. Whichever type you buy, always choose a tongue that feels soft to the touch. Salted tongue should be soaked overnight to remove the salt, and then braised or boiled with vegetables until tender. This will usually take at least three hours. It may then be served hot with mashed potatoes, or cold, with pickles, horseradish or mustard.
