Shin

Taken form the foreleg, this is one of the tougher cuts of beef. It can be cooked slowly in moist heat over several hours to produce a gelatinous meat with a rich, delicious flavour. It may also be sold as stewing steak for casseroles, stews and pies, or made into mince for chillis or bolognaise sauce.
