Flambé

Origin: French

To pour alcohol, such as brandy or fortified wine, over food and set it alight. This gives flavour to the dish, reduces the alcohol content of the spirit and also provides a dramatic effect. This technique can be used in meat or poultry dishes, or for desserts such as crêpes suzettes.
