Bain-Marie

Origin: French

A tin or pan that is half filled with hot water, into which terrines, custards and other delicate foods may be stood whilst cooking. The food cooks in a gentle, steamy atmosphere, protected from direct heat.

Also used to describe a double saucepan with water in the lower half.
