- Place the bird on a board, breast side up.
- Take a piece of kitchen string about 1 m (3 ft) long, and loop it centrally under the tail.
- Cross the string over the top of the tail, and then bring the string up over the ends of the drumsticks.
- Cross the string tightly over the drumsticks to tie them together and close to the tail.
- Pull the ends of the string towards the neck end and then pass them under the pointed end of the breastbone and over the thighs.
- Turn the bird over.
- Pull the string over the wings, pressing them close to the sides of the body.
- Tie the string over the neck flap of skin.
