Scissors and Shears

Kitchen scissors are an invaluable tool for the kitchen; they can be used to chop herbs, snip bacon, cut the fins from fish - in fact, they can be used to tackle anything that needs to be snipped or cut.

To handle all these kitchen tasks, scissors should be made from stainless steel with plastic handles to ensure that they are very sharp, strong and impervious to rust.

Before buying, try them out to see if they are comfortable. It's worth bearing in mind that you will gain more leverage (therefore strengthening their power for tough jobs) if you are able to fit your first three fingers in the lower handle.

You should also make sure that the blades are sharp and cut evenly right down to their tips. Scissors should be professionally sharpened when they become blunt.

Poultry Shears

Poultry shears are somewhat similar to garden secateurs, in that they gain their strength from the tension in the coiled spring just below the pivot point of the blades.

Shears usually have pointed tips to enable them to reach and work effectively in small awkward places, and one blade may be serrated to give a firm grip when tackling difficult tasks such cutting as small bones.
