Shallow frying is a quick and simple way to cook most fish.
Method
- Coat the fish in seasoned flour or dip into beaten egg and then coat with breadcrumbs or seasoned flour.
- Heat an equal amount of butter and oil (about 2-3 tablespoons) over a moderate heat. Make sure that the fat is hot enough before adding the fish, otherwise the coating will not seal the fish and it may taste greasy.
- Fry the fish for the times shown in the table below, turning it once halfway through the cooking period.
- Drain well on kitchen paper before serving.
