Shallow Frying Fish

Shallow frying is a quick and simple way to cook most fish.

Method

  1. Coat the fish in seasoned flour or dip into beaten egg and then coat with breadcrumbs or seasoned flour.
  2. Heat an equal amount of butter and oil (about 2-3 tablespoons) over a moderate heat. Make sure that the fat is hot enough before adding the fish, otherwise the coating will not seal the fish and it may taste greasy.
  3. Fry the fish for the times shown in the table below, turning it once halfway through the cooking period.
  4. Drain well on kitchen paper before serving.
