Trimming Flat Fish

Flat fish such as halibut are usually gutted on the boat as soon as they are caught, so preparing them for cooking is usually a simple task.

  1. Snip off the tough upper pectoral fin.
  2. Cut away the dorsal and anal fins.
  3. Cut off the head just behind the gills.
