A water-soluble vitamin that plays an important part in the maintenance of healthy cells and tissues, and in the immune system's response to infection. A deficiency may lead to scurvy, a disease in which the mucous membranes begin to bleed and the gums become spongy. Left untreated, a severe deficiency of vitamin c will lead to death.
Vitamin C is found naturally in foods such as citrus fruits (oranges, lemons and limes), broccoli, blackcurrants, kiwifruit and raw oysters.
