Ingredients
- 1 tablespoon vegetable oil
- 1 teaspoon mustard seeds
- 1/2 cup chopped carrot
- 1/2 cup chopped fresh green beans
- 3 cups water
- 1 cup long grain white rice
- 1/2 cup dry brown lentils
- 1/4 cup fresh lemon juice
- 1 pinch salt, or to taste
- 1 teaspoon chilli powder, or to taste
Instructions
- Heat the oil in a large saucepan over medium-high heat. Add the mustard seeds, and cook until they pop. Once the seeds have popped like popcorn, add the carrot and green beans. Sauté them for about 2 minutes, just to mingle the flavours.
- Pour in the water, and add the rice and lentils. Reduce the heat to low, cover, and simmer for 20 minutes, or until rice and lentils are tender. Stir in the lemon juice, and season with salt and chilli powder. Cover and allow to stand for 5 or 10 minutes before serving.
