Tom Collins

Made originally with 'Old Tom' Gin. The name of this gin is credited to Captain Dudley Bradstreet of London in 1738. To exploit a legal loophole in the prohibitionist 1736 Gin Act, he hung up a sign in the shape of a torn cat. Customers would place a sum of money into its mouth, and from its paw - via a tube - he would dispense an appropriate measure of the gin.

Ingredients

  • 2 measures of gin
  • 1 measure of lemon juice
  • 3/4 measure of sugar syrup
  • 5 measures of soda water

Instructions

Add to frosted glass two-thirds filled with ice. Add slice of lemon, serve with straws. Also known as a Collins and a Gin Collins.
