Ingredients
- 2 tablespoons butter
- 2 cloves finely chopped garlic
- 1 onion, chopped
- 1 (28 ounce) can peeled and diced tomatoes
- 1/2 teaspoon dried dill
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 (10.5 ounce) can condensed chicken broth
- 1 bay leaf
Instructions
- Melt butter in a saucepan over medium heat. Add onion and garlic, and cook, stirring until tender.
- Stir in the tomatoes and condensed chicken broth, and season with dill, salt, pepper and the bay leaf. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove from heat, and discard bay leaf. Use a food processor or blender to puree the soup in small batches until smooth. Serve immediately, or chill and serve cold.
