Tomato and Basil Soup

Ingredients

  • 1 tablespoon olive oil
  • 2 teaspoons finely chopped garlic
  • 1/4 cup finely chopped onion
  • 1/4 cup tomato puree
  • 1 quart chicken broth
  • 1 cup diced tomatoes
  • 2 teaspoons dried basil
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon dried thyme
  • 1/4 cup dry white wine
  • 1 bay leaf

Instructions

  1. In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato puree and cook until the colour is rusty.
  2. Pour in chicken broth, and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil, then reduce heat and simmer 30 minutes.
