Ingredients
- 1 tablespoon olive oil
- 2 teaspoons finely chopped garlic
- 1/4 cup finely chopped onion
- 1/4 cup tomato puree
- 1 quart chicken broth
- 1 cup diced tomatoes
- 2 teaspoons dried basil
- 1/2 teaspoon dried marjoram
- 1/4 teaspoon dried oregano
- 1/8 teaspoon dried thyme
- 1/4 cup dry white wine
- 1 bay leaf
Instructions
- In a large saucepan over medium heat, cook garlic and onion in oil until onion is translucent. Stir in tomato puree and cook until the colour is rusty.
- Pour in chicken broth, and stir in tomatoes, basil, marjoram, oregano, thyme, bay leaf and wine. Bring to a boil, then reduce heat and simmer 30 minutes.
