Lamb and Barley Soup

Ingredients

  • 1 pound ground lamb
  • 1/2 large onion, chopped
  • 1 (28 ounce) can diced tomatoes, drained
  • 2 cups water
  • 3 (10.5 ounce) cans beef consomme
  • 1 (10.75 ounce) can condensed tomato soup
  • 4 medium carrots, chopped
  • 3 stalks celery, chopped
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon ground black pepper
  • 1/2 cup barley

Instructions

  1. Place the lamb and onion into a large soup pot over medium heat. Cook and stir until the lamb is browned and crumbled.
  2. Drain excess fat if any.
  3. Stir in the tomatoes, water, consomme, and tomato soup.
  4. Add the carrots, celery, and barley, and season with chilli powder and pepper.
  5. Simmer over medium heat for 45 minutes.
