Colourful Bulgur Salad

Ingredients

  • 1/2 cup cracked bulgur wheat
  • 1/2 cup chicken broth
  • 1 small cucumber, seeded and chopped
  • 1 tomato, chopped
  • 1 carrot, shredded
  • 3 spring onions, thinly sliced
  • 3 tablespoons fresh lime juice
  • 3/4 tablespoon chilli powder
  • 1 pinch garlic powder

Instructions

  1. Place bulgur in a colander and rinse under cold running water. Drain and transfer to a small bowl.
  2. In a small saucepan bring the chicken broth to a boil. Stir in the bulgur, remove from the heat and let stand for 1 hour.
  3. Stir in the cucumbers, tomatoes, carrots, and spring onions into the bulgur.
  4. In a small bowl whisk the lime juice, chilli powder and garlic powder together. Pour over the bulgur mixture and stir until combined. Cover and chill for 2 hours before serving. Stir before serving.
