Cherry Nut Muffins

Ingredients

  • 2 eggs
  • 2 cups white sugar
  • 6 tablespoons butter, softened
  • 2 cups plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 cups canned sweet cherries, drained
  • 1 1/2 cups chopped pecans

Instructions

  1. Preheat oven to 175°C.
  2. In a medium mixing bowl, beat eggs and sugar together; add butter and beat well.
  3. In a separate bowl, sift together flour, baking powder and salt. Add the flour mixture to the egg mixture, alternating with milk. Fold in the cherries and pecans; stir just to combine.
  4. Scoop batter into prepared muffin pans and bake at 175°C for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
